Cakes - Calvin's Birthday - Carrot Cake - 2008

 

This is a square, two-layer carrot cake with a double amount of cream cheese frosting for my nephew's birthday.  He will be 16.  He isn't YET, as of this writing.  But he will be.  Too, too soon for my sister.

Anyway, Calvin loves carrot cake, so that's what he got this year.  My hands (carpal tunnel) have been bothering me a bit lately, so my decorating leaves something to be desired. 

But trust me.  The cake?  The frosting?  Not a thing wrong there.

I used the recipes for "Bill's Big Carrot Cake" from Dorie Greenspan's book Baking:  From My Home to Yours, but I doubled the frosting ingredients because there didn't seem to be enough the first time I made it.  After all, one can never have too much cream cheese frosting.

I'm pretty sure Calvin liked the cake.

My dad's oldest sister used to make cakes that were not that pleasing to look at, but it didn't take long for people to realize looks were not what it was about with Aunt Bonnie's cakes. People would pay top dollar at auctions for Aunt Bonnie's cakes and she always raised more money than anyone else. Some family member commented it was all the love she put in them, so never worry how your cake looks when you put all that love in them. And double frosting... that's a lot of love.

I agree I like cheese too, but not as much as cake. MMMM! Good for the bones!

The Cake was Superb!!! I found this cake is not only attractive but also it is very tasty. Now often at each occasion I bake this cake for my lovely kids.
