After making that Strawberry Rhubarb Pie last week, I had some dough left over, so I made these. I just pressed the scraps into a ball of dough, rolled it out into a rectangle (or something like a rectangle), brushed with some of the remaining egg wash (melted butter would work, too), and sprinkled a mixture of cinnamon and sugar over the dough.
Then I rolled the dough up, jelly-roll style, and sliced it into thin disks - about a quarter of an inch thick. I put them all out on a parchment-lined cookie sheet, brushed with more egg wash, and sprinkled with some sparkling sugar before popping them in the oven with the pie.
They puffed up a bit and were not TOO sweet - perfect with some coffee or tea - if your children don't inhale them before you get time to MAKE that coffee or tea!
Good idea! My mom used to use the scrap pie crust to make little strips for us, she'd roll it all out and cut them into strips with a little zig-zag cutter/roller/thingy. Sprinkle them with cinnamon and sugar the same as you did. We'd clean the kitchen for those.

Fabulous idea! I hate throwing away those little scraps.

I know for a fact that these tasted great!!! When I was young, my Mom used to use the leftover pie crust and do a similar thing with it.

Ooh, I love those, but I haven't made them in forever. Last night I did take some of my puff pastry scraps, cut them into pieces, sprinkle cinnamon sugar on them and bake them. Brianna and I sat in front of the oven window and watched them puff--so cool! =)
