We haven’t even colored Easter eggs yet.
I know.
It’s the day before Easter.
And I’ve got to work for most of the day today, too, so my time is extremely limited.
I think Bill’s going to have to color the eggs with the kids this year, frankly.
I’ll hard boil them this morning, and then Bill can take it from there.
I’ll post the results.
In the meantime, here are some links to my past Easter Egg posts:
Wow! And Welcome! And More Egg Pictures!
And, I need to make a coffee cake for brunch tomorrow. We got to my cousin’s family’s house for brunch every year, and, in case you’re interested, here are some of the things I’ve brought over the years:
Neopolitan Easter Pies (Two Versions)
Choereg - Armenian Sweet Bread
And, while I haven’t made this next one for Easter, it would work nicely because lemony recipes just say “spring” to me.
Or something like that.
Anyway -
Lemon Sponge Pie with Chocolate Pastry Crust
(You can make it with a different crust if you prefer.)
And one last link…
I’ve noticed that this next post gets a LOT of traffic at different times of the year, particularly RIGHT NOW.
So, if you’re looking to serve leg of lamb at your Easter gathering, here’s my favorite way to prepare it:
And there you have it.
Evidence that I have not always been a slacker.
Time to go now…I’ve got some white-shelled eggs to boil.
You're not alone. I just barely finished cooking eggs here. =)

Thanks, Di!
I hard boiled my eggs a little while ago and Im just waiting for the kids to finish brushing teeth and all that before the decorating begins. Nothing like sliding into home like this! Next year I need to plan better. (Of course, I say that every year, and for every holiday, too!)
