I had a little bit of salad left from last night. Some chopped asparagus, some greens, a couple of slices of radish.
I almost tossed them in the compost last night, but then I thought they’d make a nice omelet in the morning.
So here’s what I did.
My ingredients – the aforementioned leftover salad, a couple of eggs, and the last of the lactic cheese I made last week or whenever that was.
I put a little bit of butter in a pan and tossed in the greens and a sprinkling of salt.
I let that wilt and soften while I cracked and beat the eggs (such violence so early in the day!). Then I poured the eggs in with the greens.
I swirled the pan around so the eggs would cover the whole thing…
And then I added globs of cheese.
Mmmmm…cheeeeeeeeeeeeeeese….
I let the whole thing cook while I made toast, and then I sort of rolled the omelet into…an omelet shape. And plated it.
With the toast.
How was it, you might ask?
Very, very yummy.
Looks tasty! I may have to try that for dinner this week!
