I have tomorrow off – it will be easier to do that sausage post tomorrow. I’m letting myself off the hook for now.
In the meantime, and in the interest of writing SOMETHING food-related, here’s one of the nibbles I put out last night for our tree-trimming snacking. (No sit-down dinner last night, just snacky food. Our favorite food group.)
Remember those mini kale bites I did for Thanksgiving? I did a modified version of that. No measurements – everything was done by the handful. Except for the pie crust – I did that by the book. (It was 3 cups of flour, 1 1/2 teaspoons salt, 18 tablespoons shortening, or butter, or a combination of the two, and about 6-10 tablespoons cold water. Combine flour and salt, cut in the fat, then gradually add water until the mixture forms a dough.)
Okay, so I made the dough, then spread it out on a cookie sheet (first I preheated the oven to 425 F), poked holes in it with a fork so it wouldn’t balloon up, and than baked it for about fifteen minutes.
Then I took mashed potatoes (two russets, peeled, boiled, mashed w/butter, milk, salt, roasted garlic paste, and some blue cheese. All to taste) and spread them over the crust.
Then I took some chopped, sauteed (in bacon fat), steamed kale and spread that over the mashed potatoes.
And then I sprinkled shredded mozzarella cheese and more blue cheese over the whole thing.
I baked it for about 25 minutes at 425F until the top was a gorgeous golden brown. Then I cut it up with a pizza roller into bite sized pieces.
Oh, it was yummy.
Funny side-note. I also made a more traditional pizza-like version, with a blend of homemade spaghetti sauce, more kale, cheese, and pepperoni. Alex had specifically requested the kale on the pepperoni pizza. I love that. I told him about the other version (the one I just described) that I wanted to make, and he kind of wrinkled his nose. Just didn’t sound good to him. I hadn’t mentioned mashed potatoes, either, which he doesn’t like anyway.
But once I’d cooked everything, he went ahead and tried “my” version (after downing plenty of the pepperoni version first) and LOVED it. Yay!
