Seriously, I don’t know what to call these. But I wanted to tell you about them because they’re yummy and SO easy and I would have eaten a whole pan myself but fortunately I sent some off to school with the kids.
Anyway, they need a name.
Here’s why….
I found a reeeeeeeeeeally easy recipe for brownies one day online. Five ingredients. I didn’t have one of the ingredients, even, and rather than go to the store I substituted something else and added a couple things and came up with a quick new brownie recipe that is so successful here that I’ve made it three times and still don’t have any pictures of the final product because the brownies disappear too quickly.
But here’s the recipe for the brownies anyway:
Combine a cup and a half of sugar, three eggs, and 3/4 of a cup of mayo (yes, that was the ingredient I subbed for the original fat, which was butter) and mix at medium speed til well combined. In another bowl, whisk together 3/4 cup each of flour and cocoa powder. Blend flour mixture with sugar mixture. Pour into greased 9x9 or 8x8 pan. Sprinkle some chocolate chips (or nuts, or whatever you want) over the top, and dust with the hot cocoa mix of your choice. Bake at 350 F for about 40 minutes.
Hold back the drooling hoards as long as you can before cutting and making all gone.
So…I wanted to make something different this morning before the kids left for school, and I have a lot of lemons right now, so I changed that recipe to this:
1 1/2 cups sugar
3 eggs
3/4 cup Greek-style yogurt
zest of two lemons
1 cup flour
Combine first four ingredients, mix really well, then stir in the flour.
Pour into greased 8x8 or 9x9 (or, for thinner concoctions, which is what I did because I wanted them to cook faster), divide batter into to two square pans or pour into one (greased) 13 x 9 instead.
Bake at 350F for 30-40 minutes if in one square pan, or about 20 minutes if in two smaller pans or the one large pan.
And that’s all there is to it!
The resulting…thing…is lemony, very moist, and hard to describe. And that’s why I don’t know what to call it.
It’s not really cakey…so I’m not calling it a cake.
It’s not what I think of when I think of a lemon square, so I can’t call it that.
It’s not really a bar…or a cookie…
It just…is.
And is very tasty, too.
Doesn’t it look…inviting?
Any suggestions?
Oh, and when I asked Alex if he liked these, he said yes, and then when I asked him if he thought it needed anything, he said “More chocolate.”
So there’s my next project……

ooooooohhhhh I wonder if I can sub coconut or almond flour for the flour and make these low carb... oooooooooooohhh....
Either way they look delicious! I'm in the mood for something lemony! :D
Maybe I'll give the greek yogurt another try... hehe.

Now you really really must add a lemon syrup drizzle to these to make them lemon drizzle cakes... mmmmmmm
Or a whipped choc ganache frosting for Alex :)
